Instructions

  1. Preheat Oven: Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper and draw an 8-inch circle as a guide. Flip the paper so the pencil side is down.

  2. Prepare Meringue: In a clean mixing bowl, beat the egg whites on medium speed until soft peaks form. Gradually add the sugar, 1 tablespoon at a time, beating well after each addition. Continue until the meringue is glossy and stiff peaks form (this may take 8-10 minutes).

  3. Add Vinegar and Cornstarch: Gently fold in the vinegar (or lemon juice), cornstarch, and vanilla extract.

  4. Shape the Meringue: Spoon the meringue onto the parchment paper,  spreading it into the 8-inch circle. Create a slight depression in the center for the toppings later.

  5. Bake: Bake the meringue in the preheated oven for 1 hour 15 minutes. Turn off the oven and let the meringue cool completely inside with the door slightly ajar (about 1 hour).

  6. Prepare Whipped Cream: In a cold bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.

  7. Assemble: Carefully transfer the cooled meringue to a serving plate. Spread the whipped cream over the top and arrange the fresh fruit attractively.

  8. Serve: Serve immediately for the best texture and flavor.
